¾ cup sugar
1 stick (1/2 cup) butter
1 tsp. vanilla extract
¾ cup all purpose flour
2 cups milk
Powdered sugar (optional)
2 mixing bowls
8×8 baking dish
2 Cookpots or 2 microwave-safe bowls
Preheat oven to 325 F degrees. Grease an 8 inch x 8 inch baking dish. The dish can be prepared up to this point in advance. Using 2 bowls, separate the eggs and set the yolks aside. Place the egg whites in a mixing bowl and using an electric mixer beat the egg whites until they are stiff. In a cookpot on the stove or in a microwave-safe bowl, melt the butter. In a separate mixing bowl beat the egg yolks and sugar until they are slightly thickened and lightened in color. Add the melted butter and vanilla extract and continue beating for another minute or two. Add the flour and mix it in until fully incorporated. Place the milk in a cookpot or a microwave-safe bowl and gently heat it to a lukewarm temperature. Slowly start adding the milk to the egg mixture, and beat until everything is well mixed together. Using a spatula, add the egg whites, a third at a time and gently fold them, repeat until all egg whites are folded in. The batter will be thin like pancake batter, and should have no lumps.
Pour batter into baking dish and bake for 40 to 70 minutes or until the top is lightly golden. The baking time could vary greatly depending on the oven, so take a peek at around 40 minutes and see how it looks. You can sprinkle powdered sugar on the cake after it has cooled.
